Necessary materials:

1 Bream
1 onion
2 leaves of laurel
3-4 pieces of unground black pepper seed
1 carrot
1 potato
Half a bunch of parsley
1 spoonful of flour
Juice of half a lemon

  • Put 6 glasses of water, 1 whole peeled onion, 2 leaves of laurel and unground black pepper seed into a pot and leave the pot to boil. When the water boils immerse cleaned whole bream into the pot. Add salt and cook for 10 to 12 minutes with the lid closed.
  • Use a colander to remove the fish from the water and leave it to cool down. Strain the fish stock left in the pot with a fine mesh strainer and put this water back into the pot.

Dice the carrots and potatoes, and then add them into the stock in the pot. Cook until the vegetables mellow. Whip flour, lemon juice and some fish stock in a separate container to prepare the dressing. Add the dressing to the boiling pot. Pick the meat of the fish, chop up the parsley and add both into the pot. Keep cooking until it comes to a boil. Check the flavour and serve hot.
